Not every design can move the same day. Bouquets built from many stems of a single cultivar — 21, 31, 51 or 101 identical heads — need that many stems at one grade in the atelier at once, and a design whose cultivar has not arrived that week is closed rather than rebuilt with a different rose. The dates genuinely available appear on the order screen for each bouquet, so the constraint is visible before you pay rather than after.

Why speed does not lower the standard here
The reason same-day works without a compromise is that nothing is built in advance to begin with. Every bouquet in the range is hand-tied for its order, on the day, so a same-day order is not a shortcut version of a normal one — it is the same process compressed into fewer hours.
The photograph survives too. It would be the obvious thing to skip when an order is urgent, and it is precisely then that it matters most: an urgent bouquet is usually a sensitive one, and seeing it before it arrives is the only chance to correct anything.
